Cranberry Almond Shortbreads


Bake these cookies for your next holiday cookie party! Not too sweet, easy to make, and decadent!



2 ¼ cups          All-Purpose Flour

pinch               Salt

1 tsp                Baking Powder

½ lb                 Butter, softened

1 cup               Sugar

1 large             Egg, beaten

¼ cup              Almonds, finely chopped or ground

¼ cup              Dried cranberries, rough chopped



  1. Preheat the oven to 350°.
  2. Sift together the flour, salt, & baking powder; set aside.
  3. Beat together the butter & sugar (with an electric mixer) until light & fluffy. Beat in the egg until well blended. Fold in the flour until just combined. Stir in the almonds & cranberries until well incorporated.
  4. Using a truffle scoop, place small balls of dough onto a lined sheet tray & bake in the oven for about 10-12 minutes until just starting to turn golden brown. Remove to a cooling rack.
