ROASTED ARTICHOKE HEARTS
With limited trips to the grocery store these days sometimes we have to get creative and take a trip to our freezers instead. Next time you do make it to the store, grab a few bags of frozen artichoke hearts and you can have a healthy and delicious side dish ready in no time. This is a recipe from our Anti-Inflammatory Living class that we normally offer in-person in our kitchens. Since we can’t be together in person right now, we thought you might want to try it yourself at home!
Ingredients

1 lb. Baby Artichoke Hearts, Frozen

4 tbsp Olive Oil

4 cloves Garlic, rough chop

1 tbsp. Rosemary, finely chopped

3-4 tbsp Parsley, minced

Salt & peper to taste
Directions

Preheat oven to 425 degrees F

Toss the artichokes in olive oil and garlic and season with salt and pepper.

Place onto an oiled sheet tray.

Bake in over for about 25-35 minutes, stirring twice, until tender and light golden brown.

Garnish with parsley and rosemary.
