ROASTED BRUSSELS SPROUTS WITH LEMON AND THYME

Ingredients

  • 3 lbs                 Brussels Sprouts, halved or quartered

  • 2 Tbsp              Thyme, chopped

  • 2-3 Tbsp          Olive Oil, for roasting

  • 1 tsp                Lemon Zest

  • 2 Tbsp              Lemon juice

  • To taste           Salt & Pepper

Directions

Preheat the oven to 425˚.

  1. Toss the cut sprouts in the olive oil, thyme, salt and pepper.

  2. Place the sprouts on an oiled or nonstick sheet tray and be careful to not overcrowd.

  3. Place in the oven for 20-30 minutes until nicely colored. Pull out of oven and toss then tent loosely with foil and put back for another 10 to 12 minutes.

  4. Remove from oven and toss with fresh lemon juice and lemon zest. Add more salt and pepper if needed.

Serves 6-8
