In the Kitchen Video: Lentil Salad

Recipes from a Kitchen in Berkeley CA

Ingredients

  • 1 large Golden Beet 1/2" dice
  • 1 large Carrot 1/2" dice
  • 2 Tbsp Olive Oil + more for finishing
  • 1 Yellow Onion sliced
  • 2" finger Ginger peeled and minced
  • 1 tsp Cumin Seed whole
  • 2 Tbsp Tomato Paste
  • 1 cup French Lentils
  • 1 cup Broth Stock, or Water, more if needed
  • Salt and Pepper to taste
  • 3 cup Baby Spinach
  • 1 cup Tomatoes chopped
  • 1/2 Lemon juiced or 1-2 Tbsp Red Wine Vinegar
  • 4 slices Bacon cooked and chopped (optional)
  • 3 Sausages of choice cooked and chopped (optional)

Equipment

  • Chef’s knife
  • Stock Pot

Method

  1. Warm a stock pot over medium high heat and coat with olive oil.
  2. Add the onions and ginger and reduce the heat to medium. Cook, stirring, until onions are translucent and are starting to brown. Mix in the cumin seeds, stir, then add the tomato paste. Stir to incorporate. Add the lentils and broth and simmer for 5 minutes.
  3. Add the beets and carrots, and more liquid if needed (to achieve a brothy stew consistency.) Simmer, covered, over low heat for 25 minutes or until both lentils and vegetables are tender.
  4. Stir in the spinach and tomatoes, and season to taste with salt and pepper.
  5. Add the lemon juice or vinegar, and a drizzle of olive oil.
  6. Stir, taste, and adjust seasoning if desired.
  7. Add in the bacon and sausage if using.
