This crisp, colorful salad combines shredded red cabbage, sweet carrots, peppery arugula, thinly sliced red onions, and fresh parsley into a refreshing, nutrient-dense bowl that’s as beautiful as it is beneficial.

Red cabbage steals the show with anthocyanins—the antioxidants responsible for its vivid purple hue. These compounds help fight inflammation, reduce oxidative stress, and support heart health, while the vegetable delivers about 56 % of your daily vitamin C and plenty of fiber for digestion and immunity. Carrots add beta-carotene (which your body converts to vitamin A) for glowing skin, sharp vision, and stronger defenses.

Peppery arugula brings vitamin K, folate, and natural nitrates that promote healthy blood flow, while red onions contribute quercetin—a flavonoid with proven anti-inflammatory power. Fresh parsley rounds it out with extra vitamins C and K plus protective antioxidants.

Together, these ingredients create a low-calorie, high-fiber salad loaded with vitamins, minerals, and plant compounds that aid gut health, ease inflammation, and boost overall wellness. Serve it lightly dressed with lemon and olive oil for a quick side or light lunch that tastes like summer in every bite.
