Pickled Pineapple and Turmeric Elixir

Recipes from a Kitchen in Berkeley CA

This pineapple core and turmeric elixir is a practical way to use a part of the fruit that often gets discarded. The pineapple core is sliced thinly and combined with turmeric, cloves, black pepper, and apple cider vinegar, creating a strongly flavored vinegar that is ready after a couple of days.

Use it as you would another flavored vinegar in dressings, or dilute 1 tablespoon in a glass of water in the morning. Keep the pineapple fully submerged while it sits, and remember that the vinegar is acidic, so a little care after drinking is helpful.
