Tunisian salad of tomato, cucumber and yellow pepper at Kitchen on Fire

Tunisian Salad

A bright, crunchy salad straight from Mediterranean summer tables, with juicy tomatoes, crisp cucumber and sweet pepper tossed in fresh thyme and a tangy vinaigrette.
Cuisine Mediterranean

Ingredients

  • 5 medium tomatoes
  • 1 English cucumber
  • 1 yellow bell pepper
  • 3 tbsp fresh thyme leaves or dried thyme
  • 1/2 cup olive oil
  • 3 tbsp red wine vinegar or sherry vinegar
  • Celtic or Redmond Real Salt and black pepper to taste

Method

  1. Cut the tomatoes, cucumber and bell pepper into generous bite-size cubes, about 1 to 1 1/2 inches.
  2. Whisk the olive oil, vinegar and thyme with salt and pepper to make the dressing.
  3. Put the vegetables in a salad bowl, pour over the dressing and toss well. Don't be shy with the salt; tomatoes love it.
  4. On a hot day, cover and chill for about an hour before serving. For a dinner party, serve it at room temperature.
