Making your own vinaigrette is one of the easiest healthy habits to build in the kitchen. With just a few pantry ingredients, you can make a fresh dressing in minutes and adjust it to suit whatever salad, grain bowl, or vegetable dish you are serving.
The classic ratio is 3 parts oil to 1 part vinegar. Dijon mustard helps bring everything together, while shallot, salt, and pepper add balance and depth. You can whisk it in a bowl or shake it in a jar, then taste and adjust before serving.

Simple Vinaigrette (that goes with everything)
Ingredients
- 3/4 cup Olive oil
- 1/4 cup Vinegar
- 1 Tbsp Dijon mustard
- 2 Tbsp Shallot finely minced
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Method
- Add the vinegar, Dijon mustard, shallot, salt, and black pepper to a small bowl.
- Whisk until combined.
- Slowly pour in the olive oil while whisking continuously until the vinaigrette comes together.
- Taste and adjust the seasoning before serving.
- For the jar method, add all ingredients to a jar with a tight-fitting lid.
- Shake well until combined and emulsified.
Notes
Swap the vinegar for fresh lemon juice for a brighter dressing.
Add a little honey if you prefer a sweeter vinaigrette.
Fresh chopped herbs can be stirred in for extra flavor.
Store covered in the refrigerator and shake or whisk again before serving.
