In the Kitchen: Simple Vinaigrette

Recipes from a Kitchen in Berkeley CA

Making your own vinaigrette is one of the easiest healthy habits to build in the kitchen. With just a few pantry ingredients, you can make a fresh dressing in minutes and adjust it to suit whatever salad, grain bowl, or vegetable dish you are serving.

The classic ratio is 3 parts oil to 1 part vinegar. Dijon mustard helps bring everything together, while shallot, salt, and pepper add balance and depth. You can whisk it in a bowl or shake it in a jar, then taste and adjust before serving.
